I've had this box of Betty Crocker yellow cake mix in my pantry for over 6 months. In fact, I think it followed me from Chicago to St. Louis during our move! I gained a few pounds since leaving Chicago so I've tried my best to stay away from my passion... baking!
Today I decided that maybe I could do a little experiment and use the box of cake mix at the same time. I keep seeing these pins on Pinterest about using Coke, or soda of any kind, as a substitute for eggs and oil in cake mix. Hey, what do I have to lose? If it fails, I save myself a few unwanted calories. If it works, the recipe still has fewer calories than the traditional method. I didn't have any Coke but I did have RC.
I emptied the cake mix into my large mixing bowl and proceeded to pour the can of RC over the mix. This was like a 5th grade science experiment. There were bubbles and gasses and it was just odd! Is this really edible? I thought it was going to explode! I mixed the ingredients and then poured into my cupcake tins. Baked at the instructed 325 degrees for 25 minutes and watched anxiously through the little glass window. Good times!
They looked great as they were baking and even better when they came out. I let them cool down and then removed from tins. I used two different kinds of tins and they seemed to hold together a lot better in the stainless steal tin then in the aluminum tin.
The taste test: 3 of 5 stars They are definitely good but a lot more delicate. They kind of taste like a root beer float.
Next time I'd like to experiment with a different kind of soda.

Hey there! New follower via the GFC blog hop. I've made something similar in the crock pot, but never in cupcake form! Cupcakes are a million times better! I must find soda!
