Slow Cooker Pepper Steak is one of my favorite meals to make the dinner nights I do not have time to slave over the stove. I found a similar recipe on Pinterest a few months ago and made it my own. My family absolutely loves this meal which is wonderful for me because not only is it so easy to make, thanks to my Crock Pot and Minute Rice, but it's also very healthy. The best part about this recipe is it can be left alone all day while someone is at work or running errands and when you're ready to eat all you have to do it cook the Minute Rice in 10 minutes. I chose Minute Brown Rice because it's not only whole grain but it is also gluten free.
Here is my recipe:
Ingredients:
2 pounds beef sirloin - cut into 2 inch strips
3 tablespoons vegetable oil
4 tablespoon garlic powder; or to taste
1/2 cup beef broth
1 beef bouillon for extra flavor (optional)
3 tablespoons of cornstarch
1 chopped onion
2 bell peppers - 1 green/ 1 red cut into strips
1 (14.5 ounce) can stewed tomatoes, with liquid (with Italian Seasonings)
1/4 cup soy sauce
1 tablespoon of ground peppercorn
1 teaspoon white sugar
1 teaspoon salt
1 tablespoon red pepper flakes or cayenne pepper
1 tablespoon minced garlic (Optional)
Side Dish: Minute Brown Rice
Directions:
Add strips of sirloin to sealed plastic container and add garlic powder to taste. Shake until steak is completely covered. In a large skillet over medium heat, heat the oil and brown the beef strips. Transfer to a slow cooker.
Warm beef broth in microwave for 10 seconds. Add cornstarch; mix until completely dissolved (add bouillon if you choose) and pour into the slow cooker with meat. Stir in onion, green peppers, stewed tomatoes, soy sauce, pepper, garlic, sugar, and salt.
Cover, and cook on High for 4 to 6 hours or on Low for 8 to 10 hours.
When you are ready to eat, simply prepare the Minute Rice and serve with Pepper Steak.

Minute Rice is great when you're short on time. We always have a box in the cupboard, just in case.
Once the meal can be prepared in a short space of time and taste great I am interested. this recipe looks great and the pictures looks yummy. I will definitely try one of these Minute Rice soon.
